臺灣高梁洒Derived its name from Kao Liang, type of crop which grows in the northern China.  Kao Liang is made through unique solid-phase fermentation and distillation, then store to mature.  Kao Liang is a type of Chinese traditional spirits, known for its strong taste around the world.

The process started from inoculating cooked sorghum grain with carefully selected leaven or yeast, and followed through a special solid phase and low temperature fermentation process consisting of a double fermenting and double distilling steps.  This finished liquor then aged for years to perfect it before blending and bottling.

The spirit looks crystal sparkling with a unique pleasant fragrance .

高梁酒為我國最具代表性的蒸餾酒,產地遍及我國大江南北。

高梁酒原料

 

除主原料之高梁外,還有大麥、小麥、豌豆、小豆等。

1.     高梁--台灣高梁,過去僅有澎湖之白高梁及沿海鹿港,朴子等地種植的紅高梁,後來引進美國新品種有25種,但目前製酒所用的以West land之品種一種為主。

2.     大麥--大麥皮厚,粉碎後作麴,質鬆而菌類易於繁殖,為最麴之主要原料。

3.     小麥--在製麴上,小麥實為配合補充營養成分之功用,因其營養成分高,有利於菌類之繁殖生長。

4.     豆類--使用情形並無一定,可全用小麥替代。

「玉山高粱酒」係精選高粱為原料,遵古法釀製,將原味的高粱酒利用複蒸技術,提昇酒質,增加香味,經貯存及陳熟而成,酒色清澈透明,香醇柔和,回味怡暢。

「玉山高粱酒」酒精度54%,以圓瓶包裝,該酒適合一般消費者口味,飲用方法多樣,可直接品嚐或添加熱開水、飲料、蜂蜜、冰塊或調合雞尾酒均可,提升品味,暢意抒懷,四時飲用皆宜。

酒麴製造
將小麥磨碎後,加水攪和,以達全量之37-38%為宜,裝入圓形麴模,用壓模機重壓 成直徑25cm,厚 9cm,中間有一直徑1吋之圓孔,每塊重約5kg之麴塊,送入麴室採 開放式之自然接種培養約27天則可成熟。成熟麴塊列置於空氣流通之麴庫中,貯存 備用。酒麴以全面灰色,帶有特有的黴臭,破碎面呈灰白色,暗色部份少者為良品。

高梁飯之處理
(Ⅰ) 高梁先經洗滌,浸泡,夏季3-4日冬季4-5日,中間換水一次。
(Ⅱ) 蒸煮:可加壓蒸煮機或連續式蒸煮機,蒸煮壓力1. 5kg/cm2,約 1. 5小時,蒸煮效率高,高梁易於糊化。

發酵
發酵時用麴量為高梁飯之15-17 %,其操作係將粉碎後之高梁麴粉,以6 %量拌和已煮熟且冷卻後之高梁,入發酵槽中,並予壓緊上覆塑膠布,盡量使之密封,1 - 2 日後翻醪1次,供給空氣,促進菌類之繁殖,再予密封,發酵時醪溫以 25-30 ℃為宜。(在第5-6日間最高可達40-43℃)。夏季14-16日,冬季16-20日發酵完成。取出酒醪入蒸餾鍋行第一次蒸餾。酒渣子再分別進行第二次加6%之麴粉拌和,同第一次之方法發酵15日,第三次拌麴,加麴粉5%也發酵15日即告完成。同一原料,俱須各經三次發酵、蒸餾作業。

蒸餾
目前蒸餾與冷卻裝置,夕用機械操作。最先餾出之酒,含酒精度 65 %以上者為大麴酒,60 %-55%以上者為高梁酒,應分別貯存,酒精度降至55-10%之同者為酒尾,另行收集,去漂浮雜物,再次蒸餾,即可得與高梁酒之品質相若。

 

 

TTL (Taiwan Tobacco and Liquor Corporation) made Taiwan Michiu has been serving the Taiwan island for more than a century.  TTL Taiwan Michiu is the largest item sold in quantity other than Taiwan Beer in Taiwan.  Its main ingredient is rice, distilled and with added alcohol in formulation. 

Due to the over-whelming found of imitation Taiwan Michiu in US and many other countries, TTL has came up with new company logo as of 2004 to be recognized.  It has a solid ruby red color stamp like mark with three distinct Chinese character inside the logo clearly phrasing the word of "Cong-Mie-Gui", which in translation of their previous monopolized agency prior to 2002.

All liquor or wine based products from TTL into US after 2004 must and will bear this new logo.  (All except the Taiwan Cooking Michiu products - this will state cooking only in Chinese on the label)

真假台灣酒品美國酒局(TTB)和食品局(FDA)規定任何酒類產品進口美國須有工廠直接標明進口產地(PRODUCT OF TAIWAN)和進口商(IMPORTED BY SSC INTERNATIONAL)。 這資料須清楚的由工廠印刷在商標上。  有些非法或仿製產品並無此資料或另外張貼進口產地在瓶上,請小心認明 。 因仿冒酒在美有猖狂泛濫傾向,臺灣煙酒股份有限公司也因此在2005年聲明啟事唯有商標右上角有紅色金石印加註"公賣局"和有註明"PRODUCT OF TAIWAN"的才是且前臺灣煙酒股份有限公司生產的酒品(料酒註明"烹調料酒")。
